Aioli (pronounced aye-oh-lee) is a Mediterranean sauce made up of two ingredients: garlic and olive oil. You’ll find it most prominent in the Mediterranean coasts of Spain, Italy and France-with some slight variations of the dish depending on the country. This aioli, for instance, is derived from a classic French recipe because of its use of egg and other ingredients similar to mayonnaise. With a slight punch of garlic and an ultra-creamy texture, we wouldn’t mind smothering this on just about everything. Garlic Aioli

Ingredients
1 clove Garlic
2 ea Egg Yolks
1 tsp Mustard
1 tsp Water
2-3 oz Olive Oil
3-4 oz Vegetable Oil
As Needed Sea Salt
As Needed White Pepper

Ingredients for homemade aioli.
Method

1. Blend garlic, egg yolks, mustard and water in high speed blender
2. Drizzle in olive oil and vegetable oil until thick
3. Season with salt and pepper

*Garnish with pickled garlic and chopped parsley

Garlic aioli is great as a sandwich spread or dip.
