2 tsp avocado oil
Kosher slat
Freshly ground black pepper
Avocado Vinaigrette Ingredients

¾ cup avocado oil
½ cup white vinegar
3 tbsp lime juice

¼ tsp salt
¼ tsp ground pepper
½ cup of water
Avocado Vinaigrette Preparation

Scallops Preparation
1.Removed the small side muscle from the scallop, rinse with cold water and thoroughly pat dry.
2. Add the butter and oil to a sautéed pan on high heat. Salt and pepper the scallops. Once the oil begins to smoke, gently add the scallops. Ake sure that the scallops are not touching, sear the scallops for 1 ½ minutes on each side. The scallops should have a golden crust on each side and a translucent center. Serve immediately.
