Nantucket Cranberry Pie

Kind of like a cake dressed up as a tart, the Nantucket Pie is one of our all-time favorite desserts. Perfect for every season, this concoction mixes classic flavors that-no matter how hot or cold it gets-means this dish never goes out of fashion. We like to start ours off with a delicious, buttery, flakey pre-made crust to give it the extra pie-feel. Then, add in the cranberries, nuts, sugar and top off with the delicious almond-flavored filling. Pop in the oven, let it cool and serve up with a big scoop of vanilla ice cream. Nantucket Cranberry Pie Recipe

Ingredients:
2 cups frozen cranberries
¾ cup chopped pecans
2/3 cup sugar plus additional 1 cup sugar for paste
1 cup AP flour
4 oz (1 stick) butter, melted
2 eggs
1 tsp almond extract
¼ tsp salt

4th of July Nantucket Cranberry Pie

Directions:
1. Preheat oven to 350F.
2. Using a store-bought or homemade pie crust, roll out on a floured surface and place in a pie dish. Trim off excess crust.
2. Add berries, nuts and the first quantity of sugar. Mix well.
3. Mix remaining ingredients in a bowl to form a paste and spread evenly on top.
4. Bake at 350F for about 45 minutes or until a knife inserted in the center comes out clean, checking intermittently. Allow to cool before serving.
