For anyone who has tasted this heavenly treat, it would appear that Alfredo sauce is really made by the hands of some divine genius than a regular old you using a regular old spoon in a regular old sauce pan. But that’s the beauty of Italian food. It’s simplicity made absolutely delicious. Alfredo is also another one of those great simple yet decadent Italian dishes that can bring some spice into a Wednesday night dinner. And despite the fact it seems like it would be difficult, it’s really quite easy. The traditional recipe uses just a mix of butter and Parmesan, with the butter turning the cheese into a lovely cream sauce. Modern day Alfredo has taken it a step further and adds a bit of heavy cream or milk to create a thicker, saucier result. We’re not complaining either way. Fettucine Alfredo
32oz Fettuccine, fresh
8oz Whole butter
3pt Heavy cream
8oz Parmesan Cheese, grated

  1. Boil the pasta, keeping it slightly under cooked, refresh and drain.
  2. To make the sauce, combine the butter, cream and Parmesan in saute pan.
  3. Bring to a boil and reduce slightly.
  4. Add pasta to the pan and boil the sauce until the sauce is thick and the pasta is cooked. Adjust the seasonings and serve.
