Bombe Ceylan Recipe
4 egg yolks
¾ cup simple syrup
1 ½  whipping cream whipped
1 oz. Rum
2 qts coffee ice cream
8 Sphere molds

1. Line the mold with the coffee ice cream and freeze. Wisk the egg yolks and simple syrup together and place over a double boiler to cook to a ribbon stage. Cool the egg yolk mixture and add the rum and gently fold in the whip cream.  Pour the mousse mixture into the coffee ice cream lined sphere molds. Freeze for about 2 hours or until firm.

2. Unmold in a warm water bath and plate with desired garnish, whip cream, raspberrys, caramel sauce and a short bread cookie.
