Corn is one of those delightful vegetables that not only seems to have a place at every meal, but is also healthy. According to Eating Well, corn is chock full of dietary fiber and two phoytochemicals that can aid vision. While the ways we typically prepare corn aren’t necessarily the healthiest, have some peace of mind that the base ingredient in your savory dishes is good for you. Now that we have the health stuff out of the way, here are some delicious ways you can use your culinary academy skills to prepare corn for every meal of the day:

For breakfast
Corn casserole:
From prep to the plate, this corn casserole just takes a little over an hour, making it the perfect breakfast for a lazy Sunday morning.This savory mix of chilies, onion, cheddar cheese and corn baked into a sweet corn muffin mix will make this a family favorite. Consider sprinkling some cheese on top right before it’s finished baking so it’ll be delightfully gooey.

For lunch
Tortilla soup:
Soup is a great choice for making a large batch of at once, so you’ll have some on hand for lunch for the next week or so. This soup isn’t cream-based, so it’s easy to freeze if you enjoy preparing your meals ahead of time. If you and your family like soups with a bit of a bite, try this tortilla soup and top it with some sour cream, crushed tortilla chips and some sliced avocado to cool it down a little.

For dinner
Cowboy hash:
This dish is perfect for a hectic weeknight. It’s hearty and filling, but it only takes about twenty minutes to prepare. No matter how savvy you are in the kitchen, there’s something to be said for meals that take little time to whip up.
