4 Veggie Burger Recipes To Try

If you’re grilling burgers, you don’t want to exclude any vegetarians. While online chef programs can teach you plenty of vegetarian dishes that everyone will enjoy, if you just want to grill, here are a few veggie burger options to try:

Quinoa and zucchini veggie burger
Have some extra zucchinis? Make veggie burgers with them! All you need is a couple of zucchinis, some quinoa, shredded mozzarella, milk, bread crumbs, a few eggs and some spices. Cook the quinoa and shred the zucchini in a food processor; then whisk a few eggs in a large mixing bowl and add the veggies, milk and cheese. Once everything is mixed up, slowly add in bread crumbs until you can easily make patties out of the mixture. Once you have, grill the patties and put them on a bun. While you can add any burger toppings or condiments you want, cucumber slices, onion, lettuce and garlic aioli make nice additions.

Black bean burger
Burgers made with black beans are easy to make and very tasty. To make a veggie burger out of black beans, cook and mash the beans. While they’re cooking, run peppers and any other vegetables you’d like to add – try carrots or zucchini – through a food processor. Next, you’ll need to combine the beans and other veggies in a bowl. Add a whisked egg or two to the bean and veggie mix along with some cumin, pepper and chili powder. Once you have everything mixed thoroughly, divide up and form patties. Instead of placing directly on the grill grate, consider laying down some tin foil or using a flattop grill.

Rice, hummus and mixed veggie burger
If you have a number of different vegetables, some brown rice, hummus and bread crumbs, you’ve got all you need to make veggie burgers. Cook the rice according to package directions and shred the vegetables in a food processor. In general, carrots, onion, zucchini, bell peppers and jalapenos work well. Once the veggies are all shredded, add them, cooked rice and hummus in a large bowl. After the ingredients have been combined, slowly add in bread crumbs. Knead the mixture continuously while adding the bread crumbs. Once everything is sticking together, form patties and get to grilling. Some chili-garlic aioli, a couple of cucumber slices and a toasted bun make this a delicious meal.

Oat and spinach burger
Here’s a veggie burger that would have made Popeye proud. The ingredients are simple: spinach, milk, oats, eggs and spices. Heat the milk in a saucepan, and add in oats until the consistency is very thick and clings to any utensil you stir it with. Then, remove the oatmeal from the heat. Finely chop spinach and cook it in a skillet with butter. Once cooked, add the spinach to the oatmeal. Whisk an egg and then add it, as well as salt, parsley, garlic and onion powder, to the oats and spinach. After everything is combined, you should be able to make and grill patties. If you notice your patties won’t stick together easily, add another egg to the mix.
