No es ningún secreto que estamos absolutamente enamorados de esta fruta (sí, es una fruta!). Está lleno de un montón de grandes aceites y grasas—el tipo bueno—y es probablemente uno de los alimentos más versátiles que usted puede jugar con. Es sorprendente en las ensaladas, puré para guacamole, relleno de sándwich, o en este caso, la base para una deliciosa sopa de verano. Los jalapeño, el ajo y el cilantro hacen los mejores sabores perfectos en este plato que tiene un toque Mexicano. Un poco de crema de leche para espesar y algo de comino para mayor profundidad y tiene un plato que es rico, pero sorprendentemente ligera (los aguacates tienen ese efecto!).

Creamy Avocado Soup

Ingredients
1 tbsp butter
½ cup chopped onion
1 garlic clove, minced
6 cups chicken stock
3 ripe avocados, peeled and mashed
1 tsp lime juice
1 jalapeño pepper
2½ cups heavy cream
¼ tsp ground cumin
¼ cup fresh cilantro, chopped
Salt and pepper

Preparation
1. Heat the butter in a medium pot over medium heat. Add the onion and cook for about 2 minutes. Add the garlic, jalapeño and cook for about 30 seconds more.
2. Add the chicken stock, lime juice and avocado to the sauce pot and bring to a boil. Reduce the heat to medium and cook for about 5 minutes.
3. Puree the soup and blend until smooth. Add the heavy cream, cumin, salt and pepper.
4. Cook over medium heat for about 5 minutes. Add the fresh cilantro and serve warm.
