Escoffier Online is a work training program designed to train students for an industry position.
Hi, my name’s Josh Meyer. I’m the Director of Admissions with Escoffier Online International Culinary Academy. One of the most frequently asked questions we receive is ‘is your program accredited?’ And, right now, our program is not accredited. However, we do have many prestigious affiliations within the culinary industry, including the Chicago chapter of the American Culinary Federation, the Escoffier Foundation and Museum in East France, as well as the American Personal and Private Chef Association. There are some others, and you can check them all out at our website at www.escoffieronline.com.
Now, one thing to note with our programs being certificate programs: we do not take transfer credits from other programs, and our program is not a credit-based program. So, it is a work training program designed to train you for an industry position as an entry-level line cook or prep cook.
Upon successful completion of the program, graduates will receive a certificate of completion along with their Escoffier e-Portfolio. The certificate will be signed by Michel Escoffier, President of the Escoffier Foundation and Museum in France and great-grandson of Chef Auguste Escoffier, as well as the President of Escoffier Online.
Students that graduate from Culinary Arts Fundamentals or Baking and Pastry Fundamentals will receive a Certificate of Completion in Culinary Fundamentals or Certificate of Completion in Baking and Pastry Arts Fundamentals. Students that graduate from our Certificate in Baking and Pastry program will graduate with a Certificate in Baking and Pastry Arts.
Students will also walk away with an Escoffier e-Portfolio. Each student will have access to their own Escoffier e-Portfolio via the Escoffier Student Portal. The e-Portfolio is where the student will document their work and progression in their program by uploading photos of finished recipes as well as writing a self-assessment for each entry. A Chef Mentor will then review each Assignment and offer a grade along with written feedback, thus allowing the Chef Mentor to monitor each student’s progress. Upon completing the Program, the student can continue to access their Escoffier e-Portfolio for a two (2) year period to use as a reference and demonstrate skills to potential employers.
To become a student at Escoffier Online International Culinary Academy we do not require a SAT or ACT score. However, we encourage applicants to take the SAT or ACT because some culinary scholarships require these scores. One is only required to have a GED, high school or college diploma in order to enroll into the Certificate in Baking & Pastry Arts program.
All of our programs are for enthusiasts, careerists and professionals. There is no culinary or pastry experience required upon enrollment. Those with experience are suitable for both programs as well. Escoffier Online International Culinary Academy accepts new students daily upon completion of a phone interview with an Admissions Representative or can enroll directly online. Students must be at least eighteen (18) years of age to enroll or parental permission must be received.
One of the most popular questions we receive is, “how are assessments critiqued if a chef instructor is unable to taste the food?” You will taste your own food. The chef instructor will guide you through developing your own flavor palate, one of the most important tools a chef needs. If you are opposed to tasting your cooking assessments, friends and family can critique and give you feedback for when you fill out your self-assessment for the assignment.
Just like an onsite campus, the chef instructor is not going to walk around and taste all students’ dishes. He or she will judge visually on appearance and technique. At Escoffier Online, the chef instructors provide a rubric and detailed recipe to follow when preparing your assessments so students are able to prepare them to the chef mentors liking.
Over the duration of the culinary fundamentals program food cost totals to about $300 and over the duration of the pastry fundamentals program food cost totals to about $200.
The baking & pastry certificate program’s food cost will total approximately $1000 over the 13 month program. That equals about an extra $75 per month in food cost.
And remember, all food being bought will be used for cooking assessments and certainly will not go to waste. There will be no need to buy lavish ingredients. All ingredients needed for the programs can be found at a local grocery store. However, if a student is unable to find certain ingredients they can speak with a chef instructor to help substitute that ingredient with something more accessible.
Many students prepare their assessments for their breakfast, lunch or dinner. We recommend involving your friends and family as much as possible so you can get extra feedback about your assessment while also ensuring no food goes to waste!
Our programs range from fundamental to professional training programs that teach students the foundational skills and techniques needed to be successful in a professional or home kitchen. Escoffier Online is wonderful for enthusiasts and professionals looking to learn new skills or enhance on their current skill set.
Our online culinary and baking & pastry arts fundamentals programs are designed to prepare students for positions within the food service industry and also provide additional training to assist in career advancement.
The certificate in baking & pastry arts program offers a more detailed curriculum centered on essential techniques and skills as well as business and entrepreneurial knowledge for the student that wants to pursue business ownership within the industry.
For those that might be unsure about a career, online learning with Escoffier Online is a great way test the waters rather than attending an onsite campus that can be more time-consuming, expensive and require you to be temporarily unemployed.
Is Coursework In A Culinary Arts Vocational Program Required For Admission?
No. Approximately 50 percent of our students come from career/vocational school programs and 50 percent come from traditional academic programs. There is no requirement to submit any previous course work, portfolios or any work related to a student’s previous academic or vocational experience.
No, although some experience in the hospitality industry is preferred. A love of cooking is definitely required though! We suggest that you schedule a day in class with us or spend a day shadowing a chef in a restaurant if you have not worked in a professional culinary setting before.
If you don’t have work experience, Escoffier Online helps students build a strong skill set and gain many qualities throughout the program that employers look for when hiring. One of the modules students complete during the programs is Life Skills and Career Development, which trains our students on interviewing skills and how to find gainful employment.
Escoffier Online’s chef mentors are a major asset for students in the Culinary Arts and Baking & Pastry Fundamental programs. They can assist students in assessing their strengths and skills, help create a workforce ready resume, search job postings around the world and practice interviewing skills.
The Certificate in Baking and Pastry program has a career service department to assist with job or externship search, teaching you the skills you need to get a job. From resume writing to interview preparation, the career services department gives you a constructive helping hand through every process of the employment search. Collectively, with the Escoffier Online Culinary Academy training and career placement service, our graduates will be well prepared to hit the ground running in a new job upon the completion of the program.
Once a student enrolls in the Culinary Arts or Baking & Pastry Fundamental Programs they will receive immediate access to the student portal and will be able to log in and start their course work. Once inside the student portal students will be able to interact with other students in the program using Escoffier Online’s social engagement. They also have access to recipe and skills databases, eBooks, glossaries, live webcasts, course material and assessments. For the Baking and Pastry Fundamentals programs students will receive immediate access to orientation and the student campus, however, students will have certain start dates on when they will begin classes.
For the fundamental programs, students have 12 months, starting when they enroll, to complete the program. The Culinary Arts fundamental program takes an average 4-6 months and the Pastry Arts fundamental program takes approximately 3-4 months to complete, spending 5-10 hours per week. Students are more than welcome to put more hours into the program to finish sooner or take their time and complete it at their own pace within the 12 month timeframe.
Need to take some time off? That’s ok! Our students can pick up where they left off without falling behind. To stay on track we recommend creating a schedule that sets time aside for coursework, shopping for ingredients and preparing the food.
The certificate program is a more demanding one, with a minimum of 15 hours per week over a 13 month period required. Failure to commit this much time will most likely lead to you falling behind and the inability to finish the program.
There is also a mandatory 150 hour externship in the last block that is mandatory to graduate from the program. The externship requires students to dedicate a minimum of 25 hours per week. Failure to complete the externship will result in the student not being able to graduate.
Fundamentals Program: The current tuition is $4,000, which we break up into interest free monthly payments. Depending on the payment plan you select, you can receive an additional discount. To get started, there is a $45 registration fee and the optional professional tool kit is $200. The first payment is due thirty (30) days after enrollment, unless paying in full. A monthly payment plan is available for those that agree to pay their payments monthly via the Escoffier Student Portal. A promissory note listing the terms and conditions of the payment plan must be agreed to and signed by the student. The chef mentors evaluate students based on visual assessments. He or she will ask them to take photos of the various stages of prepping, cooking, and plating. Students are given detailed criteria to follow so they know what is required during their cooking assessments and what needs to be shown in their photos. Students are also asked to give a description for each photo they post and a detailed self-assessment of their process. If a student has a certain food allergy or is opposed to tasting that assessment allowing someone else to taste it is acceptable.
Both our Culinary and Pastry Arts Fundamentals programs are self-paced. Students have twelve (12) months to complete each program from time of enrollment. The same applies if you are enrolled in both programs; students have twelve (12) months from time of enrollment to complete that program. The student’s time will not double.
Once a fundamental’s student finishes the program, they will have access to the student portal for up to two (2) years from their enrollment date. If extenuating circumstances exist, the one (1) year completion time may be extended at the request of the student. Students that request an extension must submit documentation citing the extenuating circumstances to firstname.lastname@example.org.
The Certificate in Baking & Pastry Arts program is not self-paced and takes 13 months to complete. This program resembles a more traditional culinary school as students are guided through required weekly assignments and live sessions with their chef instructor. Falling behind or not participating will result in an incomplete and the student having to restart the program.
At this time, the Escoffier Online International Culinary Academy does not participate in Federal Financial Aid Programs, Federal Pell Grant, and Federal Direct Student Loans.
