How Are My Skills Evaluated?
Applies only for the Diploma in Culinary Arts and Operations and Diploma in Professional Pastry Arts programs: The chef educators evaluate students based on visual assessments. He or she will ask them to take photos of the various stages of preparation, cooking, and plating. Students are given detailed criteria to follow so they know what is required during their cooking assessments and what needs to be shown in their photos. Students are also asked to give a description for each photo they post and a detailed self-assessment of their process. If a student has a certain food allergy or is opposed to tasting that assessment, allowing someone else to taste it is acceptable.
