My name is Russ Kranich, I’m the Director of Operations at Marriott Vacation Worldwide Corporation. My name is Christa Ruvolo, and I’m a graduate of the Escoffier Online culinary program. I graduated this January, 2014, and I am thrilled. At the Vacation Club, I manage two outlets. I manage a poolside bar and grill as well as a snack bar and I have a staff of twenty, an assistant manager, couple of supervisors, and a really talented team of cooks. Well, I’ve always been really interested in food and I was looking to increase my education and learn a lot more about technique and things like that. So, I was looking for a culinary school that I could manage with my full-time job. For a manager like Christa to have an education in the culinary background is imperative.
There’s so many things I learned in the program that I’m able to bring to my job right now: the safety and sanitation, again, is just so key, it’s critical to every operation. But, just some recipes; we’re able to create our own sauces and dressings. We’ve created some wonderful salads with topping on hamburgers, different sauces for the hamburgers or chicken sandwich. It’s also brought me a different level of leadership to my team. They have a lot more respect for someone with my credentials now and I’m able to lead them a lot better in the kitchen.
The passion that she has, and you know that’s contagious. That rubs off on everybody she’s around, including myself. And so, we’re very thrilled that she had taken the program and gave it 100% effort and came back and she has proven to us that it was definitely worthwhile. When I started the program, I was really doing it on my own. But, I shared that with my boss and more and more he started to see the effects, really, on my performance at work. One of the most important things was the kitchen math, as well as the safety and sanitation aspects. Having a mastery of that was really important.
