Convenient One-Pot Meals

As much as we enjoy cooking, the messy aftermath of a large, elaborate meal isn’t always worth it. That’s where one-pot meals come in. It’s possible to create a culinary academy-level dinner, only dirtying up one pot in the cooking process. While soups and stews are always a handy alternative, they aren’t the only things that can prepared in a single cooking contraption. The only thing better than recipes with minimal ingredients on a busy night is a recipe that doesn’t require a lot of cleanup. These recipes are especially handy for people without a dishwasher or with minimal kitchen space. When you just can’t be bothered to do the dishes, try one of these simple dinner recipes:

Southwest Pasta
This meal from Wholesome Dish is chock full of nutrients, protein and fiber with a little bit of Southwestern zest. Though the recipe calls for chicken broth, it would still taste great with vegetable broth, so vegetarians can enjoy it as well.

Cooking implement: Large pot with lid.
Ingredients: Rotini noodles, frozen corn, green bell pepper, red onion, tomatoes, chilies, taco seasoning, salt, olive oil, chicken broth, black beans, Mexican cheese blend.

White Bean Hash
This hash can be made for any meal – not just breakfast. It’s vegan and gluten-free and despite the fact that it’s friendly toward most dietary restrictions, it’s incredibly flavorful.

Cooking implement: Heavy-bottomed skillet with lid.
Ingredients: Russet potato, olive oil, white onion, white beans, kale, lemon zest, Parmesan cheese, salt, pepper and crushed red pepper flakes.

Chicken Fajita
You may not think of potatoes as having a place in fajitas, but this recipe from the Recipe Rebel uses them as the main source of carbohydrates in place of tortillas. This dish has a bit of heat, but if you like your Mexican food spicier, add some cayenne pepper.

Cooking implement: Baking sheet.
Ingredients: Chicken, potatoes, bell pepper, red onion, chili powder, garlic powder, oregano, paprika, cumin, salt and canola oil.

Baked Risotto
Risotto is great, but who has time for all of that stirring? This baked risotto from the Floating Kitchen cuts that step out. Once everything is in the pot, you leave it alone for about 20 minutes, and your dinner is ready!

Ingredients: Olive oil, sausage, mushrooms, onion, corn, salt, pepper, white wine, chicken broth, Arborio rice, Parmesan cheese and basil leaves.

Saffron Chicken
Leave it to Sweet Peas and Saffron to have a perfect saffron chicken recipe. This dish is similar to paella, but it uses chicken instead of chorizo and can be cooked up in a single pan. Since everything is cooked together, the rice absorbs the spices and has plenty of flavor.

Ingredients: White wine, saffron threads, vegetable oil, chicken thighs, pepper, salt, onion, garlic, tomatoes, bell peppers, chicken stock, long grain rice, smoked paprika and peas.
