What Spices To Use When Grilling

In this video, Escoffier Online’s Chef Mark Dowling discusses which spices to use with your barbecue and why. Spices use to be used to mask unpleasant flavors in meat but now spices are use to enhance the flavors! Chef Mark likes to use a blend usually or suggests making your own blend of rub. Many flavorful spices that could be used for your next cookout can be find at any local grocery store.

Once you have selected your spices it is important to put the rub onto the meat wet or with a little oil about an hour before, so the rub has time to soak into the meat. Make sure to cook the meat on medium high heat so you don’t burn the spices and then enjoy!

1. McCormick Grill Mates: Applewood Rub – use on steak

2. Roundy’s (Mariano’s brand): Southwestern spice rub – nice to use on pork chops

3. Penzey’s Spices: Chesapeake Bay Seafood seasoning – taste delicious on shrimp and salmon
