Meet Your Mentor – Chef Fernando
With our culinary and pastry programs being 100% online we think it is important for you to learn about our chefs. Escoffier Online wants you to meet your chef mentor, Chef Fernando Mojica.
Chef Mojica began working in professional kitchens at the age of 14, and has never looked back. A graduate of the Culinary and Hospitality program at Elgin Community College in Elgin, Illinois, he progressed to Sous Chef with Levy Restaurants, a division of Compass Group and global leader in sports entertainment dining. He has also worked for some of the most popular steak houses and restaurants in Chicago and consulted to Tasty Catering, a nationally-recognized off-premise caterer.
Chef Mojica is an active board member of the Windy City Professional Culinarians chapter of the American Culinary Federation (ACF) where he is the current Recording Secretary and has served as Student-Member Co-Chairman. Chef Fernando holds the American Culinary Federations’ Certified Sous Chef designation. His consistent dedication to ACF has resulted in enriching competition experiences as well as scholarships from the American Academy of Chefs (AAC) and the President’s Scholarship from the Windy City Professional Culinarians. In 2010 Fernando was awarded the Cutting Edge Award and the ACF Presidential Pin by ACF National President Michael Ty, CEC, AAC. An active culinary and Ice Carving competitor, Chef Fernando has earned various bronze and silver medals from the American Culinary Federation.
