How To Make Key Lime Angel Food Cake

Angel food cake is a pastry delicacy, a spongey cake that is the perfect accompaniment to any summer meal. But we’re not talking about just plain old sponge cake here. We’re infusing the standard recipe with the refreshing flavors of key lime to bring summer flair to this all-seasons cake. Pair it with some vanilla ice cream, homemade whipped cream and/or a tart raspberry sauce for a unique spin on this classic cake.

Key Lime Angel Food Cake

Ingredients
1 ½ cups sugar
10 large eggs separated
1 tsp cream of tartar
¼ tsp salt
¾ tsp lime zest
3 tbsp key lime juice
Green food coloring (optional)
1 cup cake flour
1 cup powdered sugar
¼ cup lime juice

Directions
1. Take ½ cup of sugar and rub in the lime zest and set aside. Whip the egg whites, ½ cup of sugar, cream of tartar and the salt to a medium peak. Add 2 drops of green food coloring, the sugar with lime zest and then the lime juice. Once incorporated sift the flour and sugar together and fold in.
2. Pour the mixture into an ungreased 10×4 tube pan. Bake for 35-45 minutes at 350 degrees until golden brown, the cake should spring back when touched. Any cracks in the cake should not be sticky when touched.
3. After removing the cake from the oven invert the cake and allow to cool. Once the cake has cooled use a spatula to release the cake from the pan sides and bottom. Glaze if desired

For The Glaze
Mix 1 cup of powdered sugar with ¼ cup of lime juice, pour over the cake and decorate with sprinkles or non-pearls if desired. Serve
Note: For a thicker glaze use less lime juice. Lemon can be used in place of the lime.
