How To Make Breakfast Sausage

Ingredients

2 lbs pork shoulder
2 tbsp fresh sage
¼ tbsp pepper flakes
2 tbsp maple syrup
1 tsp black pepper
1 tsp fresh thyme
1 tbsp olive oil
½ medium onion minced
2 cloves of garlic, finely chopped
1 tsp ground coriander
1½ tbsp salt
¼ tsp ground allspice

Directions
1. Place the minced onion in a sieve and squeeze all the water out, in a sauté pan add olive oil over medium heat and sweat onions for 2 minutes, add garlic and cook for another 2 minutes. Set aside to cool off.
2. Cut pork shoulder into thin strips. Using the coarse blade, grind pork into a mixing bowl.
3. Combine the onion and garlic mixture with the ground pork, add the rest of the ingredients and mixed together until evenly incorporated.
4. Using a 1½ oz scoop, portion the mixture and form into patties.
