1 serve = 0.3 cups

0.4 cups chicken velouté
1oz butter
4 tsp tomato paste
0.6 cups chicken stock

Preparation Steps:
1. Prepare the chicken velouté

Cooking Steps:
1. Gently sweat the tomato paste with half the butter for 2 minutes
2. Add half the chicken stock and stir through
3. Add the velouté and simmer for 2 minutes, add the remaining stock to achieve desired
4. Mount with the remaining butter and season to taste
