Escoffier Educational Tour Was A Great Success!
Escoffier Online International Culinary Academy and Auguste Escoffier School of Culinary Arts set out on an extravagant Escoffier Educational Tour with students, staff, and foodies. The tour consisted of a 9 day trip beginning in Nice, France bringing together professionals and food lovers from all over the country.
First stop on the whirlwind journey was a visit to the vineyards at Chateau de Cremat for a wine tasting and tour. Soon after, a cheese tasting at Ferme des Courmettes with cheese maker Monsieur Gabelier and an olive oil tasting at the 18th century Moulin a Huile of Saint-Anne ion Grasse were enjoyed. To conclude the first day in Nice a visit to Auguste’s Escoffier grave site and home in Villeneuve-Loubet that now houses the Musee de l’Art Culinaire, the culinary museum of Auguste Escoffier. During this visit three Escoffier Chefs, including Escoffier Online’s Chef Susie Wolak were inducted into the Disciples of Escoffier International USA. Following the Chef’s inductions our time in Nice came to an end relishing in cooking demonstrations featuring Michelin-rated chefs and visits to markets, a perfume factory, and Confiserie Florian candy factory.
After leaving Nice a quick trip to Lyon, France took place for hands-on cooking in the newest kitchens of Institut Paul Bocuse, creating an elaborate five course meal for our lunch. When finished with our training in one of the most famous kitchens we were off to Paris!
In Paris, we enjoyed a trip to the largest wholesale market in the world followed by a French cheese and wine pairing at Ecole Ferrandi. If the trip couldn’t get any better it was topped off with a visit to La Grande Epicerie at Au Bon Marche, the oldest department store in Paris, and a scenic trip down the River Seine on the famous Bateaux-Mouchese.
Overall, the trip was a food success! Professionals and enthusiast were able to share their passion and experience great cuisine, wine, history, and culture of France all together. Stay tune for the next Escoffier Educational Tour February 2014! You don’t want to miss out.
